Bovine serum albumin is the main protein in the serum of cows. It is a major beef allergen and a minor cow's milk allergen that may be present in epithelial allergens in cows. In cow's milk, it is contained in a small amount (about 1% milk proteins and 5% whey proteins).

Persons with beef allergy (13-20% of patients) may be reactive to milk and vice versa – cross-reactivity, they may also note allergic reactions when eating lamb and pork. Heat treatment of milk and meat products reduces, but does not completely remove, the allergenic properties of bovine serum albumin. The presence of BSA in the composition of nutrient media used in artificial insemination, treatment with cell therapy, in the composition of cosmetic and medical albumin-containing solutions / means for skin tightening, anti-wrinkle) is possible.

Clinical manifestations in response to BSA exposure in sensitized individuals include food allergy (beef / milk) with cutaneous or gastrointestinal manifestations, asthma, allergic rhinitis, and anaphylaxis.The test is used in the complex diagnosis of allergies in to establish causally significant allergens.
